Instructions
- Prepare Dates: If your dates are especially hard or dry, soak them in warm water for 5 minutes. Then drain well to soften them and proceed with the recipe.
- Process Dates: Add the pitted dates to a food processor and pulse until broken down and a sticky “date ball” forms, about 1 minute. Break the date ball into smaller pieces.
- Add Remaining Ingredients: Add tahini, cocoa powder, vanilla extract, and sea salt to the food processor. Process for about 30 seconds until the mixture is well combined, scraping down the sides as needed. Be careful not to over-process to avoid the mixture becoming oily.
- Taste and Adjust: Taste the mixture and adjust by adding more cocoa powder for a stronger chocolate flavor or more tahini for richness, if desired, and process briefly again.
- Form Truffles: Using a 1 to 1 ½ tablespoon scoop, form the mixture into balls. Roll each ball in sesame seeds until fully coated and shake off any excess seeds.
- Chill and Serve: Enjoy the truffles immediately or place them on a plate and refrigerate for at least 30 minutes to firm up and improve texture. Store leftovers in a sealed container in the refrigerator for 5-7 days or freeze for up to 1 month.
