Ingredients

  • 1 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 1 tbsp cornflour
  • 1 tsp cinnamon
  • 115 g unsalted butter
  • 55 g granulated sugar
  • 135 g light brown sugar
  • 1 medium egg
  • 1 tsp vanilla extract
  • 200 g red, green, and brown M&Ms
  • 150 g milk chocolate chips

Instructions

  1. Step 1: Preheat your oven to 190°C (170°C fan). Line a 9×9 inch square baking tin with parchment paper and set aside.
  2. Step 2: In a bowl, whisk together the plain flour, bicarbonate of soda, salt, cornflour, and cinnamon until evenly combined. Set aside.
  3. Step 3: In a larger bowl, melt the butter. Add the granulated sugar and light brown sugar, then whisk for about 2 minutes until the sugar begins to dissolve and the mixture is smooth. Add the egg and vanilla extract, whisking briefly until fully combined.
  4. Step 4: Gently fold the dry ingredients, all but a handful of the Christmas-colored M&Ms, and the milk chocolate chips into the wet mixture using a spatula until a thick cookie dough forms.
  5. Step 5: Press the dough evenly into the prepared baking tin. Press the reserved handful of M&Ms onto the top for decoration. Bake in the preheated oven for 20-25 minutes, until the top looks dry.
