Avocado Egg Rolls

- 8–10 egg roll wrappers

Dipping Sauce
- ¼ cup sour cream
- ¼ cup mayonnaise

- 1 clove garlic
- 2 teaspoons dried parsley
- 1 teaspoon dried dill
- 1 teaspoon onion powder
- 1 teaspoon dried chives
- ½ teaspoon salt (more to taste)
- Milk (as needed to reach desired consistency)
Instructions
- Prepare the avocado filling: Dice the avocados and place them in a mixing bowl. Add lime juice, chopped sun-dried tomatoes, minced red onion, chopped cilantro, salt, and cracked pepper. Stir well, mashing the avocado slightly while keeping the mixture chunky.
- Assemble the egg rolls: Spoon about 1/4 cup of the avocado mixture into the center of each egg roll wrapper. Fold the bottom edge up to cover the filling, then fold in the sides and roll tightly. Dip your finger in water and moisten the top corner of the wrapper to seal the egg roll completely. Repeat until all egg rolls are assembled.
- Prepare for air frying: Lightly spray each egg roll with oil on all sides to ensure golden crispiness during cooking.
- Air fry the egg rolls: Place the egg rolls in a single layer in the air fryer basket with space between each for adequate air circulation.
