Cilantro Lime Slaw
- 2 cups coleslaw mix
- 1/2 cup chopped cilantro
- 2 tablespoons olive oil
- 1 lime, juiced
- 1 teaspoon kosher salt
Instructions
- Slice the Avocado: Slice each avocado into 1/2 inch thick wedges, ensuring they hold their shape well for breading.
- Prepare Breading Stations: Pour the flour mixed with 1 teaspoon kosher salt into one shallow dish. Beat the eggs with a fork in a second shallow dish. Place the panko breadcrumbs in a third shallow dish.
- Bread the Avocado Wedges: Dredge each avocado wedge first in the flour mixture, then dip into the beaten eggs, and finally coat thoroughly with the panko breadcrumbs.
- Preheat and Prepare Air Fryer: Spray the air fryer basket with avocado oil spray to prevent sticking. Arrange the breaded avocado wedges in a single layer in the basket, leaving space between pieces. You may need to cook in batches depending on your air fryer size.
- Spray Avocado Wedges: Lightly spray the tops of the breaded avocado wedges with avocado oil spray to achieve a golden, crispy texture.
- Air Fry the Avocado: Cook at 400°F (204°C) for 7-8 minutes, flipping halfway through to ensure even crisping on both sides.
- Prepare Cilantro Lime Slaw: While the avocado fries cook, combine the coleslaw mix, chopped cilantro, olive oil, lime juice, and salt in a mixing bowl. Stir until well blended.
