  • 1 teaspoon kosher salt

Boiling Solution

  • 10 cups water
  • 2/3 cup baking soda

  • 1 large egg yolk beaten with 1 tablespoon water
  • Pretzel salt or kosher salt (to taste)
  • 10 hot dogs

Instructions

  1. Activate the yeast: Combine the warm water and sugar in the bowl of a stand mixer. Sprinkle the active dry yeast on top and let it sit for 5 minutes until the mixture begins to foam, indicating the yeast is active.
  2. Make the dough: Add flour, melted butter, and kosher salt to the yeast mixture. Mix on low speed using the dough hook until well combined. Increase to medium speed and knead for 4 to 5 minutes until the dough is smooth and pulls away from the sides of the bowl. If needed, add flour a spoonful at a time until the dough clears the bowl.
  3. Proof the dough: Remove dough from the bowl and place it in a clean, oiled bowl. Cover with plastic wrap and let it rise in a warm place for approximately 50 minutes or until it doubles in size.
  4. Prepare the boiling solution: Bring 10 cups of water and 2/3 cup baking soda to a rolling boil in a deep pot.
  5. Shape the pretzel dogs: Divide the dough into 10 equal pieces. Roll and stretch each piece into a rope about 12 inches long. Wrap each rope around a hot dog, leaving a bit of the hot dog exposed at the ends, and press the ends of the dough together to secure.
  6. Preheat the air fryer: Preheat your air fryer to 370°F (188°C) for 5 minutes.
