Instructions
- Make oat flour: Blitz the gluten-free oats in a food processor or blender until they become a fine oat flour.
- Mash chickpeas: Place the drained chickpeas in a large mixing bowl and mash them using a fork or potato masher until mostly smooth with some texture remaining.
- Combine ingredients: Add smoked paprika, salt, garlic powder, cumin, and the freshly made oat flour to the mashed chickpeas. Mix well, then fold in the chopped parsley, diced jalapeno, and reserved aquafaba. Stir until a sticky, meatball-like texture is formed.
- Form patties: Shape the chickpea mixture into 4 even-sized burger patties, ensuring they hold together.
- Air fry burgers: Lightly spray each patty with olive oil. Place them in the air fryer basket and cook at 390°F (200°C) for 12-15 minutes, flipping halfway through, until the patties are crispy on the outside.
