Turkey Burgers

  • 1 1/2 tsp cornstarch
  • Salt and pepper, to taste

Spicy Mayo and Assembly

  • 1/4 cup mayonnaise
  • 2 tbsp toasted sesame oil or vegetable oil
  • 4 brioche hamburger buns
  • Fresh cilantro leaves (optional)

Instructions

  1. Make the pickled vegetables: In a medium bowl, combine the cucumber, carrot, and jalapeño slices with 1 tablespoon kosher salt. Add the rice vinegar, water, and 1 tablespoon sugar. Stir everything together until combined, then refrigerate and chill the mixture until ready to serve. This process will create fresh, tangy pickles that add crunch and flavor to your burgers.
  2. Prepare the turkey burgers: In another medium bowl, gently mix the ground turkey with 1 tablespoon of sriracha, cornstarch, fish sauce, the remaining 1 teaspoon sugar, finely chopped garlic, and thinly sliced scallions.
