  • 1 small capsicum (bell pepper), finely sliced
  • 1 tbsp freshly chopped coriander (cilantro), to garnish (optional)

Instructions

  1. Step 1: Place the chicken pieces in a medium bowl. Add olive oil, sweet paprika, smoked paprika, garlic powder, onion powder, sea salt flakes, and cracked black pepper. Toss with tongs until the chicken is evenly coated.
  2. Step 2: Heat a large, deep, heavy-based frying pan over medium–high heat. Add the chicken and cook for about 6 minutes, stirring occasionally, until browned and cooked through. Remove from heat and set aside.
  3. Step 3: Preheat the oven to 200°C (400°F) fan-forced or 220°C (425°F) conventional. Line a baking tray with parchment paper and place the flatbreads on it. Spread a thin layer of BBQ sauce over each flatbread.
  4. Step 4: Sprinkle shredded mozzarella evenly over the flatbreads. Top with the cooked chicken, red onion slices, and capsicum slices.
