Description

  • ⅓ cup peanut butter
  • 2 tablespoons tamari (or soy sauce; see notes)
  • 2 tablespoons lime juice
  • 2 tablespoons maple syrup
  • 1 tablespoon sriracha
  • 1 inch fresh ginger, minced
  • 1 garlic clove, minced
  • 12 tablespoons water (to thin sauce as desired)

Instructions

  1. Combine base ingredients: In a medium bowl, add the peanut butter, tamari, lime juice, maple syrup, and sriracha. Using a microplane, finely mince the fresh ginger and garlic directly over the bowl to capture maximum flavor. Whisk thoroughly until all ingredients are well combined. The mixture will be quite thick at this stage.
  2. Adjust consistency: Add one tablespoon of water to the bowl and whisk again to thin the sauce to your desired consistency. If you prefer a thinner sauce, add an additional tablespoon of water and stir well. Take care not to add too much water at once to avoid overly diluting the sauce.
  3. Store or serve: Use the peanut sauce immediately as a dipping sauce, dressing, or drizzle. Alternatively, transfer it to an airtight container and refrigerate for up to five days. Note that the sauce will thicken when chilled; before serving refrigerated sauce, add a tablespoon of water or let it warm to room temperature to loosen the consistency.
