Instructions

  1. Roll Out Puff Pastry: On a lightly floured work surface, roll out the puff pastry to a ¼-inch thickness to ensure an even layer that’s perfect for folding.
  2. Spread Fillings: Evenly spread the fig preserves over the puff pastry, leaving a ¼-inch border free around the edges. Next, evenly distribute the caramelized onions on top of the preserves and sprinkle blue cheese over them.
  3. Roll the Palmiers: Carefully roll up one long side of the dough towards the center, then roll the other long side to meet in the middle, forming a double-rolled log. Wrap in plastic and refrigerate for at least 30 minutes to firm up.
  4. Preheat the Oven: Set the oven to 400°F (204°C) to get it hot enough for crisping the pastry.
  5. Slice and Arrange: Remove dough from refrigerator and slice into ½-inch thick slices. Place them on a baking sheet lined with a Silpat or parchment paper, spaced at least one inch apart to allow spreading.
