Bread and Spreads

  • 2 slices multigrain bread
  • 2 tbsp mayonnaise
  • 2 tbsp blueberry jam

Cheese and Vegetables

  • 1/2 cup shredded cheddar & mozzarella (50g)
  • 1/2 green jalapeno (thinly sliced)

Butter

  • 2 tbsp salted butter (or margarine)

Instructions

  1. Cook the Bacon: Fry the bacon strips over medium-high heat until crispy. Remove from the pan and set aside on a paper towel to drain excess fat.
  2. Prepare the Bread: Spread mayonnaise evenly on each slice of multigrain bread, then top each slice with blueberry jam for a sweet and savory contrast.
  3. Assemble the Sandwich: On one bread slice, sprinkle half of the shredded cheese evenly. Layer the cooked bacon strips and thinly sliced jalapeño on top, then sprinkle the remaining cheese over the fillings.
  4. Combine the Slices: Place the other slice of bread on top with the jam side facing down, gently pressing the sandwich together to hold all ingredients in place.
  5. Preheat the Pan: Heat a frying pan over medium heat to get it ready for grilling the sandwich.
  6. Butter and Grill: Butter the top side of the sandwich and place it butter side down onto the hot pan. Immediately butter the now-top side as well.
  7. Toast the First Side: Fry the sandwich for a couple of minutes until the bread starts to turn golden brown and toasty. Carefully flip the sandwich using a spatula.
  8. Toast the Other Side: Press the sandwich down gently and fry for a couple of minutes. Continue flipping every 30 seconds while pressing down until both sides are evenly golden brown and the cheese inside is fully melted.

Notes

  • If you prefer less heat, omit or reduce the jalapeño slices.
  • Using a blend of cheddar and mozzarella helps achieve a nice balance of sharpness and creaminess in the cheese melt.
  • Maple smoked bacon adds a subtle sweetness and smoky flavor that complements the blueberry jam beautifully.
  • Serve with a fresh side salad or soup for a complete meal.
