- 2 Tablespoons cornstarch
- 2 Tablespoons vegetable oil
Sauce
- 3 cloves garlic (minced)
- 1 inch ginger (grated)
- 1 cup chicken broth
- 1/2 cup brown sugar
- 1/4 cup bourbon
- 1/4 cup low sodium soy sauce
- 2 Tablespoons apple cider vinegar
To Serve
- 2 cups white rice
- Sesame seeds, for garnish
- Green onions, sliced, for garnish
Instructions
- Season and coat chicken: Season the chicken cubes with salt and pepper. Toss them with cornstarch until all pieces are evenly coated to ensure a crispy texture when cooked.
- Brown the chicken: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and cook for 6-7 minutes until they are golden brown and crispy on the outside but not fully cooked through. Remove the chicken from the skillet and set aside, keeping it warm.
- Prepare the sauce: In a bowl, combine minced garlic, grated ginger, chicken broth, brown sugar, bourbon, low sodium soy sauce, and apple cider vinegar. Stir well to blend the flavors.
- Cook the sauce: Reduce the skillet heat to medium and pour in the prepared sauce mixture. Bring it to a boil and let it cook for 7-8 minutes, allowing the sauce to thicken and reduce slightly.
- Simmer chicken in sauce: Return the browned chicken to the skillet with the sauce. Cook for an additional 5-6 minutes, stirring occasionally, until the chicken is fully cooked and the sauce is thick with a rich brown color.
- Serve: Plate the cooked bourbon chicken over steamed white rice. Garnish with sliced green onions and a sprinkle of sesame seeds before serving.
Notes
- Use boneless, skinless chicken thighs for more tender and juicy results, but breasts also work well.
- Adjust the amount of bourbon based on preference; for a milder flavor reduce slightly.
- If you prefer a thicker sauce, add a cornstarch slurry (1 tsp cornstarch mixed with 1 tbsp water) during the sauce cooking step.
- Serve immediately after cooking to enjoy the best texture and flavor.
