Description

Brandon’s Egg Roll Tacos are a delicious fusion dish combining the savory flavors of an egg roll filling with the convenience and fun of a taco. Ground chicken, turkey, or pork is mixed with soy sauce, chili crisp, garlic, ginger, and shredded cabbage and carrots, then pressed onto small flour tortillas and cooked in a skillet until crispy and browned. Topped with fresh cabbage, cilantro, and spicy sauces like gochujang, these tacos offer a perfect balance of crunchy, savory, and spicy in every bite.

  • 1 lb. ground chicken, turkey, or pork
  • 3 tablespoons soy sauce
  • 1 tablespoon chili crisp
  • 1 tablespoon garlic paste (or 2 cloves garlic, grated)
  • 1 tablespoon ginger paste (or 1/2-inch piece ginger, grated)
  • 1 cup shredded cabbage and carrots mix (store-bought coleslaw or salad mix works well)

  • 68 small flour tortillas (recommend Mission Street Taco tortillas)
  • 23 tablespoons avocado oil or toasted sesame oil
  • Additional fresh cabbage and carrot mix (for topping)
  • Fresh cilantro or green onions (for topping)
  • Chili crisp (for serving)
  • Gochujang sauce (for serving)

Instructions

  1. Make Filling: In a mixing bowl, combine the ground meat, soy sauce, chili crisp, garlic paste, ginger paste, and shredded cabbage and carrots. Mix everything together thoroughly using your hands to ensure all ingredients are well incorporated.
  2. Spread Filling on Tortillas: Lay out the small flour tortillas on a clean surface. Press a generous amount of the meat and vegetable mixture onto one side of each tortilla, spreading it evenly. It’s easiest to do this for all tortillas before cooking.
  3. Cook Tacos: Heat a skillet over medium-high heat and add the avocado or toasted sesame oil. Working in batches, place tortillas meat-side down in the skillet. Cook for 3-4 minutes until the meat is browned and cooked through. Flip the tacos to the uncooked side for about 1 minute to toast the tortilla and then flip back meat-side down to finish cooking and ensure the internal temperature reaches 165°F for chicken or turkey, and 160°F for pork.
  4. Top and Serve: Remove tacos from the skillet and top with additional fresh cabbage and carrot mix, fresh cilantro or green onions, and drizzle with chili crisp and gochujang sauce to taste. Fold the tacos in half and serve immediately, enjoying the combination of flavors reminiscent of an egg roll wrapped in a taco shell.

  • You can substitute ground pork with ground chicken or turkey as preferred.
