Ingredients

Scale

Brownie Base

  • 1 box of Betty Crocker Brownie Mix, prepared according to box instructions

Cheesecake Layer

  • 24 ounces soft cream cheese
  • ¾ cup sugar
  • 3 eggs
  • 1 tsp vanilla extract

Chocolate Ganache

  • ½ cup semi-sweet chocolate chips
  • ¼ cup heavy cream

Whipped Cream

  • 1 cup heavy cream
  • ½ cup powdered sugar
  • 1 tsp vanilla extract

Garnish

  • Sprinkles
  • Cherries

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to ensure it’s ready for baking the brownie base.
  2. Prepare Brownie Base: Grease a 9-inch springform pan and line the bottom with a parchment paper round to prevent sticking. Prepare the brownie mix according to the package instructions and pour the batter into the prepared pan. Bake for 30-35 minutes, then allow to cool completely.
  3. Make Cheesecake Layer: In a mixing bowl, beat the softened cream cheese and sugar until smooth and creamy. Add eggs one at a time, mixing well after each addition to ensure a smooth texture. Then, stir in the vanilla extract. Pour this cheesecake mixture over the cooled brownie layer evenly.
  4. Bake Cheesecake: Place the springform pan back in the oven and bake for 1 hour, until the cheesecake layer is set. Once baked, remove and cool to room temperature, then refrigerate to chill thoroughly.
  5. Prepare Chocolate Ganache: In a small saucepan over low heat, combine semi-sweet chocolate chips and heavy cream. Whisk continuously until the chocolate has completely melted and the mixture is smooth. Allow the ganache to cool slightly before pouring it evenly over the chilled cheesecake. Return to the fridge to chill for at least one additional hour.
  6. Make Whipped Cream: Using a mixer, beat the heavy cream, powdered sugar, and vanilla extract on medium speed until stiff peaks form. This ensures a light and airy topping.
  7. Decorate Cake: Pipe or spread the whipped cream generously over the top of the ganache layer. Finish by decorating with sprinkles and cherries as garnish for a classic sundae look.

Notes

  • Use room temperature cream cheese to ensure a smooth cheesecake batter without lumps.
  • Make sure the brownie layer is completely cooled before adding the cheesecake batter to avoid mixing layers.
  • Chilling the cheesecake thoroughly after baking helps it set properly and improves slicing.
  • For a richer ganache, use high-quality dark chocolate instead of semi-sweet chocolate chips if preferred.
  • Store the finished cake in the refrigerator and consume within 3-4 days for best freshness.
