Caramelized Onion Mixture
- 1 large red onion (halved and thinly sliced)
- 1/4 cup dried cranberries (chopped)
- 4 tablespoons balsamic vinegar (divided)
- 2 tablespoons water
- 2 tablespoons brown sugar
Flatbread Toppings
- 1 flatbread
- 1/3 cup feta cheese (crumbled)
- 4–6 thin slices Jamon Serrano (ham or prosciutto)
- 1/2 cup baby arugula
- 1 tablespoon agave nectar or honey
Instructions
- Caramelize the onions: In a frying pan or sauté pan, combine the sliced onions, dried cranberries, 3 tablespoons of balsamic vinegar, water, and brown sugar. Bring the mixture to a boil, then cover, reduce heat to a simmer, and cook for 10 to 15 minutes, stirring occasionally until the onions become soft and caramelized.
- Prepare the balsamic glaze: While onions are cooking, whisk together the remaining 1 tablespoon of balsamic vinegar and the agave nectar or honey in a small bowl. Set aside for drizzling.
- Heat and top the flatbread: Warm the flatbread on a grill, in the oven, or on a stovetop grill pan. Once heated, flip it over and evenly spread the caramelized onion mixture on top, then sprinkle with crumbled feta cheese. Arrange the slices of Serrano ham or prosciutto over the cheese.
- Cook the assembled flatbread: Continue to grill or bake the flatbread for about 5 minutes, covering it if using a grill or stovetop grill pan, until the cheese begins to melt and the toppings warm through.
- Finish and serve: Transfer the flatbread to a cutting board, top with baby arugula, and drizzle with the prepared balsamic glaze. Slice and serve immediately while warm.
Notes
- You can substitute Jamon Serrano with prosciutto or another thinly sliced cured ham if unavailable.
- Adjust sweetness of the balsamic glaze by varying the amount of agave nectar or honey to your preference.
- If you prefer a crispier flatbread, preheat the oven to 400°F and bake the topped flatbread for 5–7 minutes.
