  • 2 cups cubed bread (sourdough or ciabatta recommended)
  • 2 teaspoons extra virgin olive oil
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon kosher salt
  • freshly cracked black pepper, to taste

Dressing

  • 2 cloves garlic
  • juice of 1 large lemon
  • 3 tablespoons plain Greek yogurt
  • 3 tablespoons finely grated parmesan cheese
  • 1 tablespoon mayonnaise
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 teaspoon prepared horseradish
  • 1/3 cup extra virgin olive oil
  • 1 teaspoon kosher salt
  • plenty of freshly cracked black pepper

Wrap

  • 2 large burrito-sized tortillas
  • 4 cups chopped romaine lettuce
  • 1 1/2 cups cooked chicken, chopped into bite size pieces (rotisserie or leftover chicken works well)
  • cooled homemade croutons
  • 1/4 of a small red onion, very thinly sliced
  • 2 tablespoons finely grated parmesan cheese

Instructions

  1. Make the Croutons: Preheat your oven to 375℉. Line a rimmed baking sheet with parchment paper. Place the cubed bread on the sheet, then drizzle with olive oil. Add Italian seasoning, salt, and freshly cracked black pepper. Toss to coat the bread cubes thoroughly with the oil and seasonings. Bake for 8-10 minutes, until the bread is golden brown and toasty. Allow to cool to crisp up completely.
  2. Prepare the Dressing: In a small blender or food processor, combine garlic, lemon juice, Greek yogurt, parmesan cheese, mayonnaise, Worcestershire sauce, Dijon mustard, prepared horseradish, olive oil, salt, and pepper. Blend until smooth and creamy. Taste and adjust salt and pepper if needed.
  3. Assemble the Salad Filling: In a large mixing bowl, combine chopped romaine lettuce, cooked chicken pieces, cooled croutons, thinly sliced red onion, and parmesan cheese. Add your desired amount of the prepared dressing and toss everything together until evenly coated.
  4. Build the Wraps: Warm the tortillas slightly to make them more pliable. Divide the salad mixture between the tortillas, distributing it evenly. Roll up each tortilla tightly like a burrito, then slice in half. Serve the wraps with extra dressing on the side for dipping if desired.

  • Using day-old or slightly stale bread works best for crisp croutons.
  • If you don’t have a blender, whisk dressing ingredients vigorously until well combined.
  • Feel free to substitute chicken with turkey or plant-based protein for variation.
