Chocolate Cottage Cheese Ice Cream Bites (High Protein) Recipe

  • Author: Thomas
  • Total Time: 2 hours 20 minutes
  • Yield: Approximately 10 ice cream bites 1x
  • Diet: Low Fat

Description

These Chocolate Cottage Cheese Ice Cream Bites are a high-protein, delicious frozen treat combining creamy cottage cheese blended with honey, vanilla, and almond butter, then coated in rich dark chocolate. Perfect as a nutritious dessert or snack, they offer a satisfying balance of protein and sweetness with a delightful crunchy chocolate shell.

Ingredients

Scale

Main Ingredients

  • 1 16 oz tub full fat cottage cheese
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 2 tablespoons almond butter (substitute your favorite nut butter if desired)

Chocolate Coating

  • 3 cups dark chocolate chips
  • 2 teaspoons coconut oil
  • Flaky sea salt (optional)

Instructions

  1. Blend the Base: Add the full fat cottage cheese, honey, vanilla extract, and almond butter to a blender. Blend until the mixture is completely smooth and creamy, ensuring there are no lumps.
  2. Prepare the Mold: Pour the blended cottage cheese mixture into 1-inch layers in individual slots of a silicone muffin pan. Alternatively, use a tin muffin pan with liners. Aim to make about 10 evenly sized ice cream bites.
  3. Freeze the Base: Place the filled muffin pan in the freezer for 1 to 2 hours, or until the cottage cheese layers are hard and fully frozen.
  4. Melt the Chocolate Coating: In a microwave-safe bowl, melt together the dark chocolate chips and coconut oil. Heat in four 30-second intervals, stirring well after each interval until the chocolate is smooth and fully melted.
  5. Coat the Frozen Bites: Once the cottage cheese bites are frozen solid, dunk each piece into the melted chocolate bowl. Fully coat each bite with chocolate, then transfer them onto a sheet pan or plate lined with parchment paper. Optionally, sprinkle flaky sea salt on top for added flavor.
  6. Set the Chocolate: Freeze the coated bites for about 5 more minutes, or until the chocolate shell is set and firm.
  7. Store Properly: Keep any extra bites stored in a sealed container in your refrigerator for up to a week. For the best eating experience, allow the bites to sit out at room temperature for about 10 minutes before enjoying, especially if you have sensitive teeth.

Notes

  • You can substitute almond butter with any nut butter of your choice.
  • Using a silicone muffin pan makes removing frozen bites easier, but a lined tin muffin pan works well too.
  • The freezing times may vary based on your freezer temperature.
  • For added texture and flavor, sprinkle flaky sea salt over the chocolate coating before it sets.
  • Store bites in the refrigerator, not the freezer, for optimal texture once coated.
  • Letting the bites thaw slightly before eating enhances the flavor and softness, especially for sensitive teeth.
