Instructions
- Melt the Chocolate: Melt your chocolate using either a microwave or a bain-marie. For the microwave, heat the chocolate in short bursts, stirring in between until fully melted and smooth. For the bain-marie, place a glass bowl with chocolate and coconut oil over simmering water, making sure the bowl does not touch the water. Stir until the chocolate is melted without letting steam touch it to avoid seizing.
- Prepare Toppings: Chop any large nuts or fruits as needed and arrange all toppings into small containers for easy sprinkling.
- Assemble Rice Cakes: Place about 4 rice cakes on a cutting board. Spread a generous layer of your chosen butter or nut butter and/or the melted chocolate onto each rice cake, covering almost to the edges.
