Red Jello Mixture
- 1 (3 ounce) Strawberry Jello
- ¾ cup Plain Greek Yogurt
- 2 ½ cups Sweetened Desiccated or Finely Chopped Coconut
Green Jello Mixture
- 1 (3 ounce) Lime Jello
- ¾ cup Plain Greek Yogurt
- 2 ½ cups Sweetened Desiccated or Finely Chopped Coconut
Coconut for Rolling
- ¾ cup Sweetened Desiccated or Finely Chopped Coconut (for rolling red balls)
- ¾ cup Sweetened Desiccated or Finely Chopped Coconut (for rolling green balls)
Instructions
- Prepare Baking Sheets: Line two 9×13-inch baking sheets with parchment paper and set them aside. This step prevents sticking and helps keep the jello balls intact.
- Make Red Jello Mixture: In a medium mixing bowl, combine ¾ cup Greek yogurt, the strawberry jello powder, and 2 ½ cups of coconut. Stir thoroughly until the mixture is fully blended.
- Prepare Red Coconut for Rolling: Place about ¾ cup of the coconut in a small bowl, which will be used to coat the red jello balls.
- Form and Roll Red Jello Balls: Wearing gloves, scoop about a heaping ½ tablespoon of the red mixture and roll it into a ball. Roll the ball in the small bowl of coconut to coat fully, then place it on one of the prepared baking sheets.
- Complete Red Balls: Continue forming and rolling balls with the red mixture until all the mixture is used.
- Repeat for Green Jello Mixture: Repeat steps 2 through 5 using lime jello powder, ¾ cup Greek yogurt, 2 ½ cups coconut, and a fresh ¾ cup of coconut for rolling the green balls, ensuring no color mixing occurs. Place the green jello balls on the second prepared baking sheet.
- Chill to Set: Place both trays in the refrigerator for 2 hours or until the jello balls are firm and set. Once set, they are ready to be enjoyed!
Notes
- Use gloves while shaping the balls to prevent sticking and for easier handling.
- Be sure to use separate coconut for rolling red and green jello balls to avoid color mixing.
- If sweetened desiccated coconut is not available, you can finely chop unsweetened coconut and add a little sugar if desired.
- These jello balls can be stored in the refrigerator for up to 3 days in an airtight container.
