  • 8 cups mini marshmallows, divided

  • 1 cup crushed candy canes (peppermint flavored)

Instructions

  1. Prepare pans and divide cereal: Lightly grease two 13×18-inch baking sheets and set aside. Divide 10 cups of Rice Krispies cereal into two large mixing bowls, placing 5 cups in each bowl.
  2. Melt butter and marshmallows with red color: In a medium saucepan over low heat, melt 1/4 cup butter. Add 4 cups mini marshmallows, stirring constantly until melted and smooth. Stir in 3-4 drops of red food coloring evenly.
  3. Combine red marshmallow mixture with cereal: Pour the red marshmallow mixture into one bowl of cereal. Stir with a rubber spatula until all cereal is coated. Transfer the mixture to one prepared pan and press evenly using wax or parchment paper. Set aside.
  4. Melt butter and marshmallows with green color: Repeat the melting process with the remaining 1/4 cup butter and 4 cups mini marshmallows. Add 3-4 drops green food coloring and mix until evenly colored.
  5. Combine green marshmallow mixture with remaining cereal: Stir the green marshmallow mixture into the second bowl of cereal. Press this mixture evenly into the second prepared pan.
  6. Spread marshmallow cream and crushed candy canes: Evenly spread 7 ounces of marshmallow cream over the first pan of Rice Krispies treats. Sprinkle 1 cup crushed candy canes on top of the marshmallow spread.
  7. Assemble the layers: Carefully place the second pan of Rice Krispies treats on top of the peppermint candy cane layer. Use a lightly greased rolling pin to gently press the layers together.
  8. Roll the layered treat: Starting from one long side, tightly roll the layered Rice Krispies treats like a cinnamon roll. Press gently to help the layers adhere.
