- Preheat the oven and prepare the baking sheet: Preheat your oven to 450°F (230°C) and position a rack in the middle. Line a roasting pan or baking sheet with parchment paper or a Silpat to prevent sticking and withstand high heat.
- Separate the eggs: Carefully separate the yolks from the whites, making sure no yolk gets into the whites to ensure proper whipping. If making more than one egg nest, keep each yolk in a separate prep bowl to prevent breakage.
- Beat the egg whites to stiff peaks: Place the egg whites in a very clean mixing bowl free from oil or grease. Add a small pinch of salt to each white. Using a whisk attachment or hand mixer, start beating on low speed, gradually increasing to high speed until stiff peaks form, meaning the whites hold their shape firmly.
- Fold in the cheese: Gently fold the grated cheese into the whipped egg whites, being careful not to deflate the fluffy mixture.
- Create the mounds: Spoon the egg white mixture onto the lined baking sheet in two mounds. Shape each mound into a nest by making an indentation in the center to hold the yolk later.
- Bake the egg white nests: Bake in the preheated oven for 3 minutes to start cooking the whites just enough to support the yolks.
- Add the yolks and finish baking: Remove the baking sheet from the oven, carefully place one egg yolk into the center of each nest without breaking it. Return the sheet to the oven and bake for an additional 3 minutes until the whites are golden and set but yolks remain runny.
- Serve immediately: Enjoy your cloud eggs warm for the best texture and flavor.
