Description

Instructions

  1. Preheat the Broiler: Preheat your oven’s broiler (or grill if you are in the UK) to get it ready for melting the cheese and toasting the toppings.
  2. Mash the Avocado: In a large bowl, mash the peeled avocado until smooth and creamy to serve as the base of the spread mixture.
  3. Mix the Spread: Add the white crab meat, dried basil, finely chopped red pepper, finely chopped red chilies (if using), celery salt, and freshly ground black pepper to the mashed avocado. Mix gently until well combined.
  4. Toast the Bread: Toast the slices of whole grain or sourdough bread in a toaster until lightly browned and crisp. Place the toasted bread on a broiler pan or a baking sheet.
  5. Assemble the Melts: Spread the crab and avocado mixture evenly over each slice of toasted bread. Top each slice with 4 to 5 cooked large shrimp or King prawns, then place one slice of Monterey Jack cheese on top of the shrimp.
  6. Broil Until Golden: Place the baking sheet under the preheated broiler and cook until the cheese starts to bubble and turn golden brown, usually about 2-4 minutes — watch closely to prevent burning.
