Instructions
- Prepare Homemade Granola: Preheat the oven to 325°F (165°C). In a large bowl, combine rolled oats, chopped nuts, cinnamon, and salt. In a separate small bowl, whisk together honey, oil, and vanilla extract. Pour the wet ingredients over the oat mixture and stir until evenly coated. Spread the mixture in a single layer on a baking sheet lined with parchment paper. Bake for 20-25 minutes, stirring halfway through, until golden brown and crisp. Let it cool completely before using.
- Layer Parfait Cups: Take clean serving cups or bowls. Begin by spooning a layer of vanilla yogurt at the bottom. Add a layer of homemade granola on top of the yogurt, followed by a layer of fresh mixed berries. Repeat layering until the cup is nearly full.
- Finish and Serve: Top the last layer with additional fresh berries for a colorful finish. Optionally, drizzle honey over the top for added sweetness. Serve immediately or chill for up to a few hours before serving for the granola to soften slightly.
