Instructions

  1. Prepare the coconut mixture: In the bowl of a food processor, combine the shredded coconut, melted coconut oil, honey, pitted dates, vanilla extract, and sea salt. Blend for 20-30 seconds until the dates are finely chopped and the mixture is well combined. The mixture should be sticky enough to hold together when pressed between your fingers. Place the bowl in the refrigerator for 10 minutes to allow the coconut oil to solidify and firm the mixture.
  2. Shape the bites with almonds: Using a scooper or tablespoon, scoop out heaping amounts of the chilled mixture and place them onto a baking sheet lined with parchment paper. Press one roasted almond into the top of each bite. Transfer the baking sheet to the freezer and chill for at least 30 minutes, or until the bites are firm.
  3. Melt the chocolate: Set up a double boiler by placing a small glass bowl over a pot of simmering water. Break the dark chocolate into pieces and place them in the bowl. Stir continuously for about 5 minutes as the chocolate melts smoothly without burning.
