Ingredients
Scale
Fudge Ingredients
- 2/3 cup evaporated milk
- 1 cup butter
- 3 cups granulated sugar
- 7 oz jar marshmallow fluff
- 12 oz semi-sweet chocolate chips
- 1 teaspoon vanilla extract
Instructions
- Prepare the pan: Butter or grease a 9×13 inch pan thoroughly to prevent sticking, then set it aside while you prepare the fudge mixture.
- Combine main ingredients: In a heavy duty stock pot or Dutch oven, combine the granulated sugar, butter, and evaporated milk. Heat the mixture over medium heat, stirring constantly to avoid burning, until it comes to a rolling boil.
- Boil the mixture: Once boiling, maintain a rolling boil and continue stirring for about 3 minutes, or until the mixture reaches 234º F (soft ball stage). This precise temperature is essential for the fudge to set correctly.
- Add chocolate and marshmallow fluff: Remove the pot from heat immediately. Add the semi-sweet chocolate chips and marshmallow cream to the hot mixture and stir until the chocolate chips melt completely and the mixture is smooth and well combined.
- Flavor with vanilla: Stir in the teaspoon of vanilla extract, mixing thoroughly to incorporate the flavor evenly throughout the fudge.
- Pour and spread: Pour the fudge mixture into the prepared 9×13 inch pan. Use a spatula to spread it into an even layer to ensure uniform hardening.
- Set the fudge: Allow the fudge to cool and set at room temperature for approximately 90 minutes until it hardens sufficiently to be cut and served.
Notes
- Use a candy thermometer to accurately measure the temperature for best results.
- Butter or spray the pan generously to ensure easy removal of the fudge.
- Do not skip stirring constantly during boiling to prevent the mixture from burning on the bottom.
- If desired, you can add nuts or other mix-ins at the same time as the marshmallow fluff.
- Store fudge covered at room temperature or in the refrigerator for up to two weeks.
