Paratha Dough

- 0.75 cup lukewarm water
- 2 tbsp melted ghee

Chicken Smash Burger Patties
- 300 g ground chicken
- 1 small onion, finely chopped
- 0.5 tsp chilli powder
- 1 green chilli, chopped
- 0.5 tsp fennel seed powder
- 0.25 tsp garam masala powder
- 2 tbsp chopped coriander leaves
- 1 egg
- 0.25 cup bread crumbs
- salt and pepper to taste
- 4 slices cheddar cheese
- 2 tbsp butter or oil
- 0.5 onion thinly sliced (for topping)
- capsicum (optional, for topping)
Spicy Mayo Sauce
- 4 tbsp mayonnaise
- 2 tbsp ketchup
- 1 tsp chili garlic sauce
- 0.5 tsp oregano seasoning
- 0.5 tsp smoked paprika
- dash of lemon juice
Instructions
- Make the Paratha Dough: In a mixing bowl, combine the all-purpose flour and salt. Gradually add lukewarm water while mixing until a soft dough forms. Knead the dough for 8-10 minutes until it becomes smooth and elastic. Coat the dough lightly with melted ghee, cover with a damp cloth, and let it rest for 30 minutes to relax the gluten.
- Shape and Roll the Paratha: Divide the rested dough into equal-sized balls. Roll each ball into a thin circle on a floured surface using a rolling pin. Lightly brush the rolled dough with a thin layer of ghee.
- Form Paratha Layers: Using a pizza cutter, slice the rolled dough into thin strips. Roll these strips into a tight coil, then gently stretch and flatten the coil back into a paratha shape. This technique creates flaky layers in the bread.
- Cook the Paratha: Heat a tawa or non-stick skillet over medium-high heat. Place each paratha on the hot skillet, cooking for 2-3 minutes on each side. Brush with ghee and cook until golden brown and flaky. Remove and keep warm while preparing the rest.
- Prepare the Chicken Patties: In a mixing bowl, combine ground chicken, finely chopped onion, chilli powder, pepper, fennel seed powder, chopped green chilli, garam masala powder, chopped coriander leaves, egg, bread crumbs, and salt. Mix thoroughly. Divide the mixture into equal-sized balls for patties.
- Cook the Smash Burger Patties: Heat a cast-iron skillet or heavy pan over high heat until very hot. Add butter or oil. Place one meatball on the pan and immediately smash it flat using a spatula or burger press. Let it sear undisturbed for 1.5-2 minutes to develop a crust.
- Flip and Melt Cheese: Flip the patty carefully, cook the other side until done through. Place a slice of cheddar cheese on top and allow it to melt for about a minute. Repeat for all patties.
- Make the Spicy Mayo Sauce: In a small bowl, mix mayonnaise, ketchup, chili garlic sauce, oregano, smoked paprika, and a dash of lemon juice until well combined.
- Assemble the Burger: Place one paratha on your plate. Spread a generous amount of spicy mayo sauce on top. Add a cheesy smashed chicken patty, followed by thinly sliced onions, capsicum (if using), and pickled vegetables for added crunch and flavor.
- Finish the Burger: Spread more spicy mayo sauce on the second paratha and place it on top to close the burger. Optional: Toast the entire assembled burger in a panini press or dry pan for 1-2 minutes to achieve a crispy finish and meld the flavors together.
