Instructions
- Make Chicken Broth: In a large bowl, combine 8 cups of water with 4 tablespoons Better Than Bouillon Chicken. Microwave for 3 minutes, then stir well and set aside.
- Sauté Vegetables: In a large stockpot over medium heat, add 4 tablespoons salted butter, 4 carrots, 4 celery stalks, and 2 small diced yellow onions. Stir well to combine and cook for 10 minutes, stirring often to prevent the onions from burning.
- Add Flour and Broth: Stir in ½ cup flour until combined. Then slowly add the prepared chicken broth and bring the mixture to a boil.
- Add Chicken and Seasonings: Add the shredded cooked chicken, 1 teaspoon Italian seasoning, 1 teaspoon garlic powder, 1 teaspoon onion powder, and 1 teaspoon salt. Stir well, then reduce heat to low and let simmer while preparing dumplings.
- Prepare Dumplings Mixture: In a bowl, combine 2 cups Bisquick with 1 teaspoon salt, 1 teaspoon garlic powder, and 1 teaspoon Italian seasoning. Drizzle ⅔ cup milk into the mixture and gently stir to form a thick, paste-like batter. Avoid overmixing. Let rest for 1-2 minutes.
- Cook Dumplings: Using a 1.5 tablespoon cookie scoop, gently drop dumpling batter into the simmering chicken mixture, leaving space between dumplings as they will expand. Cover pot and simmer on low heat for 15 minutes.
