Description

Egg Roll In A Bowl is a quick and flavorful stir-fry dish that combines ground turkey, fresh vegetables, and classic Asian seasonings. This easy one-pan meal captures the essence of egg rolls without the wrapper, making it a low-carb and healthier alternative perfect for busy weeknights.

Ingredients

Scale

Proteins and Oils

  • 2 teaspoons sesame oil
  • 1 pound ground turkey

Vegetables and Aromatics

  • ½ cup minced onion
  • 2 teaspoons minced garlic
  • 1 tablespoon fresh grated ginger (or 1 teaspoon dried ginger)
  • 1 (14-ounce) bag prepared coleslaw mix
  • ¼ cup chopped green onions

Sauces and Seasonings

  • ¼ cup soy sauce
  • 2 tablespoons hoisin sauce
  • Salt and pepper to taste

Instructions

  1. Heat the Oil and Cook Onions: In a large skillet or wok, heat 2 teaspoons of sesame oil over medium-high heat. Add ½ cup minced onion and sauté until the onions turn translucent, about 3-4 minutes.
  2. Add Garlic and Ginger: Stir in 2 teaspoons minced garlic and 1 tablespoon fresh grated ginger. Cook for an additional 30 seconds to release their fragrant flavors without burning.
  3. Brown the Ground Turkey: Add 1 pound of ground turkey to the skillet. Cook for 7-8 minutes, stirring occasionally, until the turkey is browned and cooked through with no pink remaining.
  4. Add the Coleslaw Mix: Pour in a 14-ounce bag of prepared coleslaw mix. Stir well to combine and continue cooking until the cabbage and vegetables begin to soften, about 3-4 minutes.
  5. Incorporate Sauces: Add ¼ cup soy sauce and 2 tablespoons hoisin sauce to the skillet. Mix thoroughly to evenly coat all ingredients with the sauces.
  6. Season and Garnish: Taste the mixture and season with salt and pepper as needed. Remove from heat and garnish with ¼ cup chopped green onions before serving.

Notes

  • For a spicier version, add a teaspoon of red pepper flakes or a dash of sriracha when adding sauces.
  • This recipe can easily be made with ground pork or chicken instead of turkey.
  • Use low-sodium soy sauce to reduce sodium content.
  • To make it gluten-free, substitute tamari for soy sauce and use gluten-free hoisin sauce.
  • Leftovers keep well in the refrigerator for up to 3 days and reheat nicely in a skillet or microwave.
