- 6 cups Rice Krispies cereal
- 6 tablespoons unsalted butter
- 6 cups mini marshmallows (divided)
- 1 cup creamy peanut butter
- Pinch salt (if your peanut butter doesn’t have any)
- 7.5 ounce container of Marshmallow Fluff
Instructions
- Prepare the pan: Line a 9×13-inch baking pan with parchment paper, allowing the edges to hang over the sides for easy removal, then spray it lightly with nonstick spray. Set aside.
- Measure the cereal: Pour 6 cups of Rice Krispies cereal into a large mixing bowl and set aside.
- Melt butter and marshmallows: In a medium saucepan over low heat, melt 6 tablespoons of unsalted butter. Add 4 cups of mini marshmallows and stir frequently until they are melted and mostly combined. It’s fine if the mixture isn’t completely smooth.
- Add peanut butter and salt: Turn off the heat, then stir in 1 cup of creamy peanut butter. If your peanut butter is unsalted, add a pinch of salt now and mix well.
- Combine with cereal and fluff: Immediately pour the peanut butter mixture into the large bowl of Rice Krispies. Add the 7.5-ounce container of Marshmallow Fluff and the remaining 2 cups of mini marshmallows, and stir gently to fully coat and combine all ingredients.
- Press into pan: Transfer the mixture into the prepared baking dish. Press it down into an even layer using the bottom of another 9×13 pan, your hands (sprayed with nonstick spray), or by placing parchment paper on top and pressing with your palms for an even finish.
- Set and serve: Allow the mixture to set for at least 15 minutes at room temperature. Once set, lift the bars out using the parchment edges and slice into 12 large bars. Serve and enjoy!
Notes
- For easier mixing and pressing, work quickly while the marshmallow and peanut butter mixture is warm and pliable.
- Use nonstick spray or butter on your hands or spatula when pressing the mixture to prevent sticking.
- These treats store well in an airtight container at room temperature for up to 3 days.
- You can substitute crunchy peanut butter if you prefer added texture.
