This Football Field Dip is a fun and festive layered party appetizer that resembles a football field with colorful layers of refried beans, sour cream, pico de gallo, queso, scallions, and guacamole. Tortilla Football Goalposts
- 2 small flour or corn tortillas
- Canola oil, for brushing
- 1/2 tsp kosher salt, plus more for sprinkling
Dip Layers
- 2 (16-oz.) cans store-bought or homemade refried beans
- 1/2 tsp store-bought or homemade adobo seasoning
- 2 1/4 cups sour cream, divided
- Freshly ground black pepper, to taste
- 1 3/4 cups store-bought or homemade pico de gallo
- 1 3/4 cups store-bought or homemade queso
- 4 scallions, thinly sliced (about 1/2 cup)
- 1 1/2 cups store-bought or homemade guacamole
- 1/2 lime
Garnishes
- 7 pitted black olives
- 7 pitted green olives
- 14 baby carrots
- Tortilla chips, veggies, or pita chips, for serving
Instructions
- Prepare Tortilla Goalposts: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Brush each tortilla lightly with canola oil and sprinkle with kosher salt. Using a sharp knife, carefully cut a 2-dimensional field goal shape into each tortilla. Place on the prepared baking sheet.
- Bake Tortillas: Bake the tortillas in the preheated oven for 6 to 7 minutes until they are golden brown and crisp. Transfer them to paper towels to cool.
- Mix Refried Beans: In a medium bowl, combine the refried beans with adobo seasoning and mix thoroughly. Spread this beans mixture evenly on the bottom of a 13″x9″ baking dish.
- Layer Sour Cream: In the same bowl, mix 2 cups of sour cream with 1/2 teaspoon kosher salt and a pinch of freshly ground black pepper. Using a rubber spatula, spread this sour cream mixture evenly over the beans layer.
- Prepare Pico de Gallo: Strain any excess liquid from the pico de gallo using a fine-mesh strainer. Starting at the shorter left edge of the baking dish, spread the pico de gallo over the sour cream, leaving about a 2-inch space of exposed sour cream on the right edge.
- Layer Queso and Scallions: From the shorter right edge of the dish, spread the queso over the exposed sour cream and pico de gallo layers, leaving 2 inches of pico de gallo exposed on the left edge to serve as one end zone. Sprinkle sliced scallions over the queso layer, leaving 2 inches of queso exposed to create the other end zone.
- Spread Guacamole: Spread the guacamole over the scallions to form the football field area. Squeeze the juice of half a lime over the guacamole layer for added flavor.
- Pipe Field Lines and Numbers: Place the remaining 1/4 cup sour cream in a piping bag fitted with a small tip. Pipe a single line across the center of the guacamole parallel to the short edges of the baking dish for the midfield line. Pipe two evenly spaced lines on each side to create a total of five goal lines. At the base of the center line, pipe a number “5” to the left and a “0” to the right. Repeat these numbers on the opposite side.
- Assemble Final Decorations: Place a baked tortilla field goalpost at each end of the dip to represent the goalposts on the field.
- Make Helmet Carrots: Place one olive onto each baby carrot to resemble a helmet. Insert the carrot with the olive end sticking up into the dip at various spots to mimic players on the field.
- Serve: Serve the football field dip alongside tortilla chips, veggies, or pita chips for dipping.
