Instructions
- Mix Ingredients: In a large mixing bowl, combine the vanilla Greek yogurt, mini marshmallows, and some crushed graham cracker bits. Gently fold or stir the mixture together to distribute the ingredients evenly without breaking up the marshmallows.
- Scoop Clusters: Using a large cookie scoop or a 1/4 cup measuring cup, portion the yogurt mixture into clusters and place them onto a baking sheet lined with parchment paper.
- Freeze Clusters: Transfer the baking sheet with the yogurt clusters to the freezer and allow them to freeze solid, ensuring they hold their shape for the chocolate coating.
- Melt Chocolate: Once the clusters are frozen, melt the semi-sweet chocolate in a microwave-safe bowl in 30-second increments, stirring after each, until smooth. If the chocolate is too thick, stir in one tablespoon of coconut or neutral oil to thin it.
- Coat Clusters: Remove the frozen yogurt clusters from the freezer one at a time and dip each into the melted chocolate, fully coating them. Place the chocolate-coated clusters back on the parchment-lined baking sheet.
