Jelly Mixture
- 2 cups apple juice
- 4 g kanten powder (agar agar powder)
- 2 tablespoons sugar
Instructions
- Prepare Fruits: Wash the raspberries thoroughly, peel and cut the kiwi into small pieces, and drain the syrup or juice from the canned mandarins. Set all the prepared fruits aside.
- Heat Apple Juice: Pour the apple juice into a saucepan and place it over medium heat to warm.
- Add Kanten and Sugar: Add the kanten powder and sugar to the apple juice, stirring to combine well. Bring the mixture to a boil.
- Simmer Mixture: Once boiling, reduce the heat to low and let it simmer gently for 1 to 2 minutes to fully dissolve the kanten powder and integrate the sugar.
- Arrange Fruits in Mold: Place the prepared fruits evenly into the mold or container where the jelly will be set.
- Pour Jelly Mixture: Carefully pour the hot agar mixture over the arranged fruits in the mold, ensuring the fruits are covered.
- Refrigerate to Set: Cover the mold with a lid or plastic wrap and refrigerate for at least 30 minutes until the jelly is fully set and firm.
Notes
- Use fresh or canned fruits based on availability and preference; ensure canned fruits are drained well to avoid diluting the jelly.
- Kanten powder is a vegan-friendly gelatin substitute made from seaweed; ensure even dissolution for a smooth set.
- Adjust sugar amount to taste depending on the sweetness of the apple juice and fruit used.
- For a firmer jelly, you may increase the kanten powder slightly, but 4 g is sufficient for 2 cups of liquid.
- Use a mold of your choice – silicone molds work well for easy removal.
- This dessert is best served chilled and consumed within 1-2 days for optimal freshness.
