Ingredients

Scale

For the Cookie Crust

  • 3/4 cup sugar
  • 1 1/4 cups all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 1 teaspoon vanilla extract
  • 1 large egg

For the Cream Cheese Frosting

  • 12 ounces cream cheese, softened
  • 1/4 cup butter, softened
  • 1 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

For the Topping

  • 710 strawberries, sliced
  • 56 kiwis, sliced
  • 1 mango, sliced
  • 1/2 cup blueberries
  • 1 small bunch of grapes, halved

Instructions

  1. Make the Crust: In a bowl, mix the softened butter, sugar, egg, and vanilla extract until well combined. This can be done using an electric mixer or by hand if the butter is melted. Then add the flour, baking powder, and salt, mixing until the dough comes together. Chill the dough in the refrigerator for 30 minutes to firm up.
  2. Bake the Crust: Preheat your oven to 350°F (175°C). Line a baking stone or baking sheet with parchment paper. Roll out the chilled dough onto the parchment to a thickness between 1/4 and 1/2 inch, leaving some space around the edges. Bake for 20-25 minutes until slightly golden. Remove from the oven and allow it to cool completely.
  3. Make the Cream Cheese Frosting: Using an electric mixer, beat together the softened cream cheese, softened butter, powdered sugar, and vanilla extract until the mixture is smooth, creamy, and well combined. Spread this frosting evenly over the cooled cookie crust. Chill again in the fridge to help the frosting firm up before adding the fruit.
  4. Decorate with Fruit: Arrange the sliced strawberries, kiwis, mango, blueberries, and halved grapes over the cream cheese frosting in a decorative pattern or design of your choice. The fresh fruit adds texture, flavor, and vibrant color to the pizza. Serve chilled for best results.

Notes

  • Ensure the cream cheese and butter are softened to room temperature for a smooth frosting texture.
  • Chilling the dough before baking helps prevent shrinkage and makes rolling easier.
  • The fruit topping can be customized with your favorite fresh fruits depending on seasonality and preference.
  • This dessert is best eaten the same day or within 1-2 days for optimal freshness.
  • Use parchment paper for easy removal and cleanup of the cookie crust.
