			Fats and Oils
- ¼ cup ghee or butter, divided
- 1 tablespoon olive oil
Vegetables and Herbs
- 1 lb Yukon Gold potatoes, cut into ½ inch cubes
- 3 garlic cloves, minced
- 1 teaspoon dried thyme
- ½ teaspoon dried oregano
Seasonings
- ½ teaspoon sea salt, plus more to taste
- ¼ teaspoon ground black pepper, plus more to taste
Protein
- 1 ¼ lb sirloin steak, cut into ½ inch cubes
Instructions
- Prep: Cut the Yukon Gold potatoes into ½ inch cubes and the sirloin steak into similar-sized cubes. Mince the garlic cloves to prepare all ingredients before cooking.
- Heat the Skillet: Place a large cast iron skillet on medium heat. Add the olive oil and 2 tablespoons of ghee or butter, allowing it to melt and warm thoroughly.
- Cook the Potatoes: Add the cubed potatoes to the skillet. Sprinkle minced garlic, dried thyme, oregano, sea salt, and ground black pepper evenly over the potatoes. Let them cook for 2-3 minutes before stirring, then continue to cook, stirring every 1-2 minutes, until the potatoes are golden brown and fork-tender, about 8-10 minutes. Avoid overcrowding to ensure even browning. Once cooked, remove the potatoes and browned bits from the pan and set aside.
- Sear the Steak: Increase heat to medium-high and add the remaining 2 tablespoons of ghee or butter to the pan. When melted, add the steak cubes, seasoning lightly with salt and pepper. Let the steak sear undisturbed for at least 2 minutes to develop a golden crust. Stir and cook for an additional 1-2 minutes until all sides are browned.
- Combine and Finish: Return the potatoes and browned bits back into the skillet with the steak. Stir everything to combine and heat through. Adjust seasoning with additional salt and pepper to taste. Optionally, garnish with freshly chopped parsley. Serve immediately and enjoy!
Notes
- Use Yukon Gold potatoes for their buttery texture and flavor, which hold up well during cooking.
- Don’t overcrowd the pan when cooking potatoes or steak to ensure proper browning and caramelization.
- Using ghee enhances the nutty, rich flavor and has a higher smoke point suited for searing.
- You can substitute sirloin with ribeye or other tender steak cuts for varying textures and tastes.
- Fresh parsley on top adds a bright, fresh note balancing the richness of the dish.
