Instructions
- Prepare Baking Surface: Place a sheet of wax paper or parchment paper on a baking tray to prevent sticking and for easy transfer of the truffles after dipping.
- Mix Ingredients: In a medium bowl, combine the pumpkin purée, homemade pumpkin spice, salt, and liquid stevia. Stir well to blend all flavors before adding the oat flour. Gradually add the oat flour, mixing just until incorporated to avoid overworking the dough.
- Form Truffle Spheres: Using a small amount of the mixture at a time, roll it into bite-sized spheres with your hands. To prevent sticking, rub your fingers and palms lightly with a neutral-tasting oil. Place each sphere onto the prepared baking sheet and repeat until all mixture is used.
- Melt Chocolate: Put roughly chopped dark chocolate into a microwave-safe bowl. Microwave on HIGH for 30 seconds, then stir for 1 minute. Continue heating in 10-second intervals, stirring after each, until the chocolate is fully melted and smooth. Keep the melted chocolate warm while assembling to maintain fluidity.
- Dip Truffles: Using two forks, carefully dip each pumpkin ball into the melted chocolate. Allow excess chocolate to drip off by gently rocking the truffle between the forks. Place the coated truffle back onto the wax paper. If desired, sprinkle a small amount of flaky sea salt on each dipped truffle immediately to enhance flavor.
- Set Truffles: Once all truffles are coated, place the baking tray in the freezer for 5-10 minutes or the refrigerator for 15-20 minutes until the chocolate hardens completely.
