  • Total Time: 55 minutes (including chilling time)
  • Yield: 6 servings 1x

Description

This High-Protein Banana Pudding is a creamy, delicious dessert that combines the classic flavors of banana pudding with a nutritious boost of protein. Made with vanilla protein powder, instant pudding mix, milk, heavy cream, and high-protein yogurt, it offers a satisfying treat perfect for those looking to enjoy dessert without sacrificing their protein goals. Layered with ripe bananas and Nilla Wafers, this recipe is easy to prepare and can be refrigerated overnight for convenience.

Ingredients

Scale

Protein Pudding Base

  • 1/2 cup vanilla protein powder
  • 1 (3.4-oz.) package vanilla instant pudding mix
  • 1 1/2 cups whole or nondairy milk, cold

Whipped Cream Mixture

  • 1 1/4 cups heavy cream
  • 1/3 cup high-protein vanilla yogurt (such as Siggi’s)

Layers

  • 3 ripe bananas, thinly sliced
  • 27 Nilla Wafers, lightly crumbled, plus 4 whole Nilla Wafers for garnish

Instructions

  1. Prepare the pudding base: In a medium bowl, whisk together the vanilla protein powder and vanilla instant pudding mix. While whisking constantly, slowly stream in the cold milk until the mixture is smooth and free of lumps, which should take about 1 minute. Cover the bowl with plastic wrap and refrigerate for at least 40 minutes, or up to overnight. The pudding will be slightly looser than usual at this stage.
  2. Make the whipped cream mixture: In a large bowl, use a handheld mixer set to medium-high speed to beat the heavy cream until soft peaks form. Add the high-protein vanilla yogurt and continue beating until stiff peaks form, which should take an additional 30 to 60 seconds. Reserve 1/2 cup of this whipped cream mixture by scooping it out into a separate container and refrigerating it until needed.
  3. Fold the mixtures together: Use a rubber spatula to gently fold the remaining whipped cream mixture into the chilled pudding base until the ingredients are fully combined and no streaks remain.
  4. Layer the pudding: In small jars or serving glasses, layer 1/4 cup of the pudding mixture, followed by 4 to 5 banana slices, and approximately 2 crumbled Nilla Wafers. Repeat these layers once more, then top with a final 1/4 cup of pudding mixture. Repeat this process with the remaining jars or glasses until all ingredients are used.
  5. Garnish and serve: Top each serving with a spoonful of the reserved whipped cream, a whole Nilla Wafer, and additional banana slices for an appealing finish. Serve immediately or chill until ready to enjoy.

Notes

  • For a dairy-free version, substitute whole milk and heavy cream with their nondairy counterparts.
  • The pudding mixture can be prepared up to a day in advance and stored in the refrigerator to save time.
  • Adjust the amount of protein powder to suit your dietary needs without altering the pudding’s consistency too much.
  • For extra texture, sprinkle additional crumbled Nilla Wafers or chopped nuts on top before serving.
