Ingredients
Scale
Fritter Batter
- 1 ¼ cups all purpose flour
- 2 teaspoons baking powder
- ¾ teaspoon ground cinnamon
- ½ teaspoon salt
- 2 tablespoons brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ⅓ cup milk
- 3 Granny Smith apples, peeled, cored, and cut into small cubes
For Frying
- vegetable oil, enough to fill skillet ¼ inch deep
Glaze
- 1 ½ cups powdered sugar
- 2–3 tablespoons water
Instructions
- Mix dry ingredients: In a large bowl, sift together the all purpose flour, baking powder, and ground cinnamon. Add salt and brown sugar, whisking everything to combine evenly.
- Whisk wet ingredients: In a separate bowl, whisk the eggs and vanilla extract until frothy to incorporate air for a light batter.
- Combine batter: Fold the dry flour mixture into the egg mixture gently, then add the milk and fold to create a smooth but not overmixed batter.
- Add apples: Carefully fold in the peeled, cored, and cubed Granny Smith apples, taking care not to overmix to keep lightness in the batter.
- Prepare frying station: Line a baking tray with paper towels and place a wire rack on top for draining fritters after frying.
- Heat oil: Pour vegetable oil into a medium skillet to a depth of ¼ inch and heat over medium. Test the temperature by dipping the end of a wooden spoon into the oil; it should bubble steadily after a few seconds.
- Fry the fritters: Drop ¼ cup portions of batter into the hot oil, frying 3-4 fritters at a time to avoid overcrowding. Cook for 3-4 minutes until the bottom is dark golden, then carefully flip and cook the other side for another 3-4 minutes until cooked through and crisp.
- Drain and cool: Transfer the fried fritters to the wire rack to cool slightly while preparing the glaze.
- Make glaze: Sift the powdered sugar into a small bowl. Add water gradually, stirring until the glaze reaches a smooth, runny consistency suitable for dipping.
- Glaze the fritters: Dip the tops of the cooled fritters into the glaze, then return them glaze-side up to the wire rack. Allow the glaze to set for a few minutes before serving.
Notes
- Use Granny Smith apples for their tart flavor and firmness; avoid softer varieties to prevent mushy fritters.
- Do not overcrowd the skillet while frying to maintain oil temperature and ensure even cooking.
- Adjust glaze thickness with water; it should drizzle easily but still coat the fritters well.
- Fritters are best enjoyed fresh and warm, though they can be reheated briefly in a skillet or oven.
- Be cautious when frying as hot oil can splatter; use a splatter screen if needed and keep children away from the stove area.
