Peanut Butter Filling
- 1 cup / 250g smooth peanut butter
- 60g / 4 tbsp unsalted butter
- 1/4 cup / 55g brown sugar
- 1 cup / 120g icing sugar (powdered sugar)
Chocolate Coating
- 500g / 16 oz chocolate (for melting, not eating chocolate)
Instructions
- Prepare Muffin Tin: Line 3 x 12 hole mini muffin tins with paper patties to create compartments for the peanut butter cups.
- Make Peanut Butter Mixture: Combine peanut butter, unsalted butter, and brown sugar in a small saucepan over medium heat. Stir constantly until melted and the mixture begins to bubble gently. Remove from heat.
- Add Icing Sugar: Gradually add powdered sugar to the peanut butter mixture, about 1/4 cup at a time, stirring vigorously after each addition until fully incorporated and smooth.
- Cool Filling: Set the peanut butter mixture aside to cool. Place in the refrigerator to speed up the cooling process, ensuring the mixture firms up for shaping.
- Melt Half the Chocolate: Melt half of the chocolate in the microwave using 30-second bursts, stirring well between each interval until smooth and completely melted.
- First Chocolate Layer: Spoon about 1 1/2 to 2 teaspoons of melted chocolate into each muffin cup to form the base layer.
- Shape Peanut Butter Discs: Scoop a slightly heaped teaspoon of the cooled peanut butter mixture, roll into a ball, then flatten slightly into a disc smaller than the muffin cup diameter. Place the disc in the center of each muffin cup atop the chocolate layer.
- Chill to Set: Refrigerate the muffin tins for 20 minutes to allow the chocolate layer and peanut butter filling to firm up.
- Melt Remaining Chocolate: Melt the rest of the chocolate in the microwave in 30-second bursts, stirring in between until fluid and smooth.
- Top with Chocolate: Pour about 1 1/2 to 2 teaspoons of melted chocolate over each peanut butter disc to fully cover the filling. Gently tap the muffin tin on the countertop to smooth out the chocolate surface.
- Final Chill: Refrigerate the peanut butter cups for another 20 minutes to solidify the chocolate topper.
- Serve: Remove the paper patties from each peanut butter cup and enjoy your homemade Reese’s Peanut Butter Cups.
