  • Author: Thomas
  • Total Time: 1 hour 15 minutes
  • Yield: 36 mini peanut butter cups 1x

Description

Delicious homemade Reese’s Peanut Butter Cups made with a smooth peanut butter filling encased in rich melted chocolate. These treats are perfect for satisfying your sweet tooth with a classic peanut butter and chocolate combination, crafted easily in your kitchen using simple ingredients and no baking required.

Ingredients

Scale

Peanut Butter Filling

  • 1 cup / 250g smooth peanut butter
  • 60g / 4 tbsp unsalted butter
  • 1/4 cup / 55g brown sugar
  • 1 cup / 120g icing sugar (powdered sugar)

Chocolate Coating

  • 500g / 16 oz chocolate (for melting, not eating chocolate)

Instructions

  1. Prepare Muffin Tin: Line 3 x 12 hole mini muffin tins with paper patties to create compartments for the peanut butter cups.
  2. Make Peanut Butter Mixture: Combine peanut butter, unsalted butter, and brown sugar in a small saucepan over medium heat. Stir constantly until melted and the mixture begins to bubble gently. Remove from heat.
  3. Add Icing Sugar: Gradually add powdered sugar to the peanut butter mixture, about 1/4 cup at a time, stirring vigorously after each addition until fully incorporated and smooth.
  4. Cool Filling: Set the peanut butter mixture aside to cool. Place in the refrigerator to speed up the cooling process, ensuring the mixture firms up for shaping.
  5. Melt Half the Chocolate: Melt half of the chocolate in the microwave using 30-second bursts, stirring well between each interval until smooth and completely melted.
  6. First Chocolate Layer: Spoon about 1 1/2 to 2 teaspoons of melted chocolate into each muffin cup to form the base layer.
  7. Shape Peanut Butter Discs: Scoop a slightly heaped teaspoon of the cooled peanut butter mixture, roll into a ball, then flatten slightly into a disc smaller than the muffin cup diameter. Place the disc in the center of each muffin cup atop the chocolate layer.
  8. Chill to Set: Refrigerate the muffin tins for 20 minutes to allow the chocolate layer and peanut butter filling to firm up.
  9. Melt Remaining Chocolate: Melt the rest of the chocolate in the microwave in 30-second bursts, stirring in between until fluid and smooth.
  10. Top with Chocolate: Pour about 1 1/2 to 2 teaspoons of melted chocolate over each peanut butter disc to fully cover the filling. Gently tap the muffin tin on the countertop to smooth out the chocolate surface.
  11. Final Chill: Refrigerate the peanut butter cups for another 20 minutes to solidify the chocolate topper.
  12. Serve: Remove the paper patties from each peanut butter cup and enjoy your homemade Reese’s Peanut Butter Cups.

Notes

  • Use a chocolate meant specifically for melting, such as couverture or baking chocolate, rather than regular eating chocolate for best results.
  • If the peanut butter mixture is too thick, allow it to soften slightly before shaping to avoid cracking.
  • Store leftovers in an airtight container in the refrigerator to maintain freshness.
  • You can use natural peanut butter, but it may affect texture and firmness of the filling slightly.
  • Adjust sugar quantities if you prefer a sweeter or less sweet filling.
