Ingredients
Scale
Beef and Seasonings
- 4 lb. beef chuck roast
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 tsp. oregano
Additional Ingredients
- 2 tbsp. cooking oil
- 4 oz. cream horseradish (Beaver Brand recommended)
- 1 Tbsp. Worcestershire sauce
- 1 cup beef broth
- 1 white onion (sliced)
- 3 cups white mushrooms
- Additional horseradish if desired
Instructions
- Brown the Roast: In a large skillet over medium-high heat, add the cooking oil and swirl to coat the bottom. Sear the beef chuck roast on all sides until well browned to develop flavor. Then transfer the roast to the slow cooker.
- Season and Add Horseradish: Sprinkle salt, pepper, and oregano evenly over the roast. Spread the 4 oz. of cream horseradish over the top of the roast to infuse it with tangy heat.
- Add Vegetables and Liquids: Place the sliced white onion and white mushrooms around the roast in the slow cooker. Pour in the Worcestershire sauce and beef broth to add moisture and depth of flavor.
- Slow Cook: Cover the slow cooker with its lid and cook on LOW for 9 to 10 hours, ensuring the lid is not opened during cooking to maintain steady temperature and moisture.
- Make Gravy (Optional): After cooking, use the pan drippings to make a gravy either by thickening with flour or by mixing with gravy packets as a flavorful sauce companion.
- Serve and Enjoy: Slice the pot roast and serve it with the mushrooms, onions, and optional horseradish for a delicious, hearty meal.
Notes
- Use cream horseradish for the best texture and flavor; Beaver Brand is recommended.
- Do not open the slow cooker lid during cooking to ensure the meat stays tender.
- You can adjust the amount of horseradish based on your heat preference.
- Making gravy from the drippings adds a wonderful finishing touch to the dish.
- If you don’t have a slow cooker, a similar effect can be achieved by braising the roast in the oven at a low temperature for several hours.
