Instructions

  1. Prepare Oven: Preheat your pizza oven or conventional oven. For a wood-fired pizza oven, target around 700°F with a hot pizza stone. If using a home oven, preheat to the highest temperature (usually 500°F) and place a pizza stone or steel inside to heat thoroughly.
  2. Shape Dough and Add Toppings: Lightly dust a wooden pizza peel with flour. Gently stretch or roll your pizza dough to an 11-13 inch diameter. Spread the pizza sauce evenly over the dough with a spoon. Sprinkle the mozzarella and ricotta cheeses evenly next. Arrange shredded prosciutto, coppa slices, and thin red onion slivers evenly on top.
  3. Check Dough Slide: Ensure the pizza slides easily on the peel by gently shaking it. If it sticks, dust more flour under the edges and gently lift sides to loosen it to avoid tearing.
  4. Bake Pizza: Slide the pizza onto the preheated pizza stone or oven surface. If using a wood-fired oven, turn the pizza every 15 seconds or when the crust bubbles near the flame. Bake until the crust is golden and the bottom is cooked thoroughly, approximately 2 minutes in a wood-fired oven, or 7-10 minutes in a conventional oven.
