Sandwich Ingredients
- 12 slices sandwich bread
- 8 slices bacon, cut in half
- 1/2 lb. shaved ham
- 1/2 lb. shaved turkey
- Romaine or green leaf lettuce, as needed
- 4 avocados, peeled and sliced
- 4 slices cheese (Swiss, mozzarella, or your choice)
- Potato chips, for serving
Spreads
- 4 tbsp. mayonnaise, divided
- 1 tbsp. prepared basil pesto
- 1 tbsp. prepared sun-dried tomato pesto (or a couple of pureed sun-dried tomatoes)
Instructions
- Toast Bread: Toast the bread slices until they are lightly golden brown, giving them a crispy texture to hold the sandwich layers well. Once toasted, set them aside.
- Cook Bacon: Fry the bacon strips in a pan until they are just barely crisp. Remove them and drain on paper towels to remove excess grease, then set aside.
- Prepare Pesto Mayonnaise Spreads: In a small bowl, mix 2 tablespoons of mayonnaise with the prepared basil pesto. In another small bowl, combine the remaining 2 tablespoons of mayonnaise with the sun-dried tomato pesto or pureed sun-dried tomatoes. These flavored mayonnaises will add extra depth to the sandwich.
- Build First Layer: Spread the basil pesto mayonnaise on one side of two pieces of toasted bread. On one piece, layer shaved ham and a few leaves of lettuce. On the other piece, add avocado slices topped with several strips of bacon. Then carefully place the avocado and bacon slice, ingredient side down, on top of the ham and lettuce slice to create the first sandwich layer.
- Build Second Layer: Spread sun-dried tomato pesto mayonnaise on the top of the bread layer you just placed. Add turkey slices and more lettuce. Take a third slice of bread, spread one side with sun-dried tomato pesto mayonnaise, and top it with avocado slices, bacon strips, and a slice of cheese. Place this third slice, ingredient side down, on top of the sandwich to complete the double-decker club sandwich.
- Finish and Serve: Repeat the sandwich-building process for the remaining ingredients to make more sandwiches. Use a sharp knife to cut each sandwich in half diagonally, then cut each half into two quarters for easy eating. Serve immediately with a side of potato chips for a satisfying crunch.
Notes
- Use your favorite type of cheese: Swiss or mozzarella work well, but feel free to experiment.
- For a vegetarian version, omit the bacon, ham, and turkey, and add grilled vegetables instead.
- Toasting the bread adds stability and texture, so don’t skip or under-toast it.
- If you cannot find prepared pestos, you can use homemade or store-bought pesto sauces or simply mash sun-dried tomatoes.
- This sandwich is best served fresh to retain the crispness of the bacon and bread.
