Ingredients
Scale
Pasta and Sauce
- 12 dry lasagna noodles
- 1 tablespoon olive oil
- 24 ounces marinara sauce (1 jar)
Meat and Vegetables
- ½ onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon kosher salt, divided
- ½ teaspoon Italian seasoning
- 1 pound ground beef
Cheese and Herbs
- 15 ounces whole milk ricotta cheese (1 container)
- 3½ cups freshly shredded mozzarella cheese, divided
- ½ cup freshly grated Parmesan cheese
- ¼ cup chopped fresh parsley and/or basil
- 1 large egg
- ¼ teaspoon ground black pepper
Instructions
- Boil: Preheat the oven to 375°F and grease a 9×13-inch baking dish. Bring a large pot of salted water to a boil, then cook the lasagna noodles according to package directions until al dente. Drain the noodles with cold water and lay them on a parchment paper-lined sheet pan to prevent sticking.
- Cook Onions and Garlic: Heat olive oil in a large skillet over medium heat. Add the chopped onion and ½ teaspoon kosher salt, cooking until soft and translucent. Stir in the minced garlic and Italian seasoning, cooking for an additional 30 seconds to release their aroma.
- Brown Beef: Add the ground beef to the skillet and cook thoroughly until browned and no longer pink. Drain any excess fat if necessary.
- Add Sauce: Stir in the marinara sauce with the beef mixture, then remove the skillet from heat and set aside.
- Combine Cheese Mixture: In a bowl, mix together the ricotta cheese, 1½ cups mozzarella cheese, Parmesan cheese, chopped herbs, egg, ½ teaspoon kosher salt, and ground black pepper until well combined.
- Assemble Roll Ups: Spread about ½ cup of the meat sauce evenly on the bottom of the prepared baking dish. Lay a lasagna noodle flat and spread 3-4 tablespoons of the cheese mixture over it, then add 2-3 tablespoons of the meat sauce on top of the cheese. Carefully roll up the noodle and place it seam side down in the baking dish. Repeat with remaining noodles and fillings.
- Top and Cover: Pour the remaining meat sauce evenly over the top of the lasagna roll ups, then sprinkle with the remaining shredded mozzarella cheese. Cover the dish tightly with foil, ensuring the foil does not touch the cheese to prevent sticking.
- Bake: Bake in the preheated oven for 20 minutes. Remove the foil and continue baking for another 10-15 minutes or until the edges become browned and bubbly. For an extra golden and toasty top, broil the lasagna for 1-2 minutes if desired.
Notes
- To prevent noodles from sticking after boiling, lay them carefully on parchment paper and avoid stacking.
- You can substitute ground beef with ground turkey or Italian sausage for different flavors.
- Fresh herbs like parsley and basil can be adjusted based on preference or availability.
- Let the lasagna sit for about 5-10 minutes after baking to make slicing easier.
- If using no-boil noodles, increase baking time slightly and ensure ample sauce coverage for proper cooking.
