Sweet Potato Chips

Spiced Ground Beef

  • 1 pound lean ground beef
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 2 teaspoons sauce from a can of chipotle in adobo peppers

Toppings

  • 1/2 medium red onion, finely chopped
  • 2 scallions, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 avocado, pitted and thinly sliced or diced
  • 1/3 cup packed cilantro, coarsely chopped
  • Lime wedges, for serving

Greek Yogurt Chipotle Crema

  • 1/2 cup plain Greek yogurt (2% or full-fat)
  • Juice of 1 lime
  • 2 tablespoons sauce from a can of chipotle in adobo peppers
  • 1 teaspoon hot sauce
  • 1/4 teaspoon salt

Instructions

  1. Prepare Sweet Potato Chips: Preheat the oven to 400℉ and line two large rimmed baking sheets with parchment paper. Place the thinly sliced sweet potatoes in a large bowl, toss with olive oil, and sprinkle with cumin, chili powder, garlic powder, and salt. Toss again to coat evenly. Arrange the slices in a single layer on the baking sheets. Bake for 20 minutes, then flip the slices and bake for another 5 to 10 minutes until crispy and golden.
  2. Cook Spiced Ground Beef: While the potatoes bake, heat a large nonstick skillet over medium-high heat. Add the ground beef and cook for 3 to 4 minutes, stirring frequently and breaking it into small pieces. Add chili powder, cumin, garlic powder, onion powder, paprika, smoked paprika, salt, and chipotle adobo sauce. Stir to combine and cook for another 3 to 4 minutes until the beef is fully cooked and flavorful.
  3. Make Chipotle Greek Yogurt Crema: In a small bowl, whisk together Greek yogurt, lime juice, chipotle in adobo sauce, hot sauce, and salt. Adjust salt to taste, then set the crema aside.
  4. Assemble Nachos: Once the sweet potato chips are golden and crispy, arrange them on a large platter. Top evenly with the spiced ground beef, chopped red onion, scallions, halved cherry tomatoes, avocado slices, and cilantro. Drizzle with the chipotle yogurt crema and serve with additional lime wedges on the side for squeezing.
