  • Author: Thomas
  • Total Time: 5 hours 15 minutes to 6 hours 15 minutes
  • Yield: 6 servings 1x

Description

Lumberjack Casserole is a hearty, comforting slow cooker dish combining lean ground beef, potatoes, beans, and a blend of savory seasonings. Topped with sharp cheddar cheese, this casserole is perfect for a filling family meal with minimal prep and hands-off cooking.

Ingredients

Scale

Meat & Vegetables

  • 1 lb. lean ground beef (7% fat)
  • 2 small russet potatoes, cubed
  • 1 sweet yellow onion, diced

Seasonings

  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1 tsp salt
  • ¼ tsp freshly ground pepper

Other Ingredients

  • 15 oz can petite diced tomatoes
  • 15 oz can kidney beans, drained
  • 10.5 oz can cream of mushroom soup
  • 8 oz bag sharp cheddar cheese

Instructions

  1. Brown the ground beef and onions: In a skillet over medium heat on the stovetop, cook the ground beef and diced onions together until the beef is browned and crumbled and the onions are softened. Drain off any excess grease to keep the dish lean.
  2. Add remaining ingredients to slow cooker: Transfer the cooked beef and onions to a slow cooker. Add the cubed potatoes, onion powder, garlic powder, chili powder, salt, pepper, petite diced tomatoes, kidney beans, and cream of mushroom soup. Stir to combine.
  3. Slow cook the casserole: Cover and cook on low heat for 5 to 6 hours, allowing the flavors to meld and the potatoes to become tender.
  4. Finish with cheese and serve: Once cooking is done, give the casserole a good stir. Sprinkle the sharp cheddar cheese evenly over the top and serve warm, letting the cheese melt slightly from residual heat.

Notes

  • For a thicker casserole, reduce the amount of tomatoes or drain excess liquid before slow cooking.
  • You can substitute ground turkey or chicken for a leaner protein option.
  • Adding a pinch of smoked paprika can enhance the smoky depth of flavor.
  • Serve with a side of crusty bread or a simple green salad for a well-rounded meal.
  • Make sure to check the potatoes are fully cooked before serving; cooking times can vary slightly depending on the slow cooker brand and size.
