Wet Ingredients
- 1/2 cup creamy almond butter
- 1/2 cup coconut oil
- 1/2–3/4 cup maple syrup
- 2 teaspoons vanilla bean paste (or vanilla extract)
Dry Ingredients
- 3 cups gluten free oats
- 1 cup sliced almonds (chopped or slivered also works)
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the granola.
- Melt and Mix Wet Ingredients: Melt the coconut oil in the microwave for about 30 seconds. In a large bowl, combine the melted coconut oil with the maple syrup, vanilla bean paste, and creamy almond butter. Mix thoroughly until the mixture is smooth and uniform.
- Combine Dry Ingredients: Add the gluten-free oats, cinnamon, sliced almonds, and salt to the wet mixture. Stir well until the oats and almonds are evenly coated. The mixture should be lightly coated and not overly wet; if too wet, add extra oats to achieve the right consistency.
- Spread on Baking Sheet: Pour the granola mixture onto a large baking sheet lined with parchment paper. Spread it out evenly to ensure even baking.
- Bake the Granola: Bake in the preheated oven at 350°F for 25-35 minutes. Check around the 20-minute mark as oven times may vary. Stir the granola halfway through baking if you prefer smaller chunks.
- Cool and Serve: Once the granola is lightly browned and toasted, remove it from the oven and let it cool for at least 10 minutes. After cooling, break the granola into chunks and serve as desired.
