Matcha Truffle Mixture

- Combine Ingredients: In a large, microwave-safe mixing bowl, combine 1 1/4 cups white chocolate chips, heavy cream, vanilla extract, sea salt, and matcha powder. For a smoother mixture, sift the matcha powder through a mesh sieve to reduce lumps. Stir well until the mixture is smooth.
- Microwave and Stir: Microwave the mixture for 30 seconds, then stir with a rubber spatula. Return to the microwave for another 30 seconds and stir again. The mixture should be smooth without any overcooking signs. If needed, microwave in additional 15-second intervals carefully to avoid the chocolate separating and becoming oily.
- Chill the Mixture: Cover the bowl with plastic wrap and refrigerate for 2 hours to let the mixture firm up enough for rolling.
- Shape the Truffles: Line a baking sheet with parchment paper. Using about 1 tablespoon of mixture at a time, scoop and roll into smooth balls. Place the formed balls on the prepared baking sheet and refrigerate for approximately 30 minutes to firm up further.
- Melt the White Chocolate Coating: In a microwave-safe bowl, combine 1 cup white chocolate chips with 2 teaspoons coconut oil. Microwave for 30 seconds, stir, then microwave for an additional 30 seconds until smooth and fully melted.
- Coat the Truffles: Using a fork, gently drop each matcha truffle ball into the melted white chocolate, rolling it to coat completely. Lift out with the fork, shaking gently to remove excess chocolate, then scrape the fork on the bowl edge and transfer the coated truffle back to the parchment-lined baking sheet.
- Drizzle Extra Chocolate: After coating all truffles, use the fork to drizzle any extra melted white chocolate over the tops for decoration.
- Set the Truffles: Return the baking sheet to the fridge and chill the truffles for about 15 minutes to set the coating firmly. Optionally, dust the truffles lightly with extra matcha powder for a finishing touch.
- Storage: Store the truffles in an airtight container in a single layer. They can be kept refrigerated for up to 5 days or stored at cool room temperature if the climate is not warm.
