Ingredients
Scale
Dry Ingredients
- 3 cups / 360g all purpose / cake flour
- ¼ cup / 50g sugar
- ½ teaspoon salt
- 2 ½ teaspoons / 8g instant dry yeast
Wet Ingredients
- 1 cup / 250ml milk
- 2 egg yolks
- 30 g melted butter
- 1 teaspoon vanilla extract
Other
- Oil for deep frying
- Jam or custard for filling
- Castor sugar to coat fried donuts
Instructions
- Mix Dry Ingredients: In a large bowl, combine the flour, yeast, sugar, and salt thoroughly.
- Warm Wet Ingredients: Melt the butter in a pot and add the milk, warming gently on the stove until just warm (not boiling). In a separate small bowl, beat the egg yolks until light and fluffy.
- Combine Wet and Dry: Add the warmed butter-milk mixture, vanilla extract, and beaten egg yolks into the dry ingredients. Mix gently to form a soft dough; no kneading required.
- First Rise: Lightly grease a large bowl with oil and place the dough inside. Cover and leave to rise in a warm, draft-free area for about 45 minutes, until doubled in size.
- Shape Donuts: Once risen, punch down the dough and turn it onto a floured surface. Pat gently to a thickness of ½ inch (1 ¼ cm). Use a 3 inch (7 cm) round cookie cutter to cut out circles.
- Second Rise: Place the cut dough circles onto a tray or baking sheet and let them rise again for 15 minutes.
- Heat Oil: In a deep pot, heat sufficient oil for deep frying over medium-low heat. The oil temperature should be moderate to ensure the donuts cook through without burning.
- Fry Donuts: Fry the donuts in batches for about 2 minutes on each side until golden brown and cooked thoroughly inside.
- Coat with Sugar: Roll the hot donuts in castor sugar while still warm and allow them to cool slightly on a wire rack or plate.
- Fill Donuts: Using a sharp knife, make a small hole in the side of each donut. Insert a pastry bag fitted with a plain tip nozzle filled with jam or custard and pipe the filling into the center of each donut.
- Serve Fresh: Enjoy these donuts best when eaten fresh on the same day for maximum softness and flavor.
Notes
- Ensure the milk is warm but not hot when mixing to activate the yeast without killing it.
- Use a thermometer to maintain oil temperature around 325°F (165°C) for perfect frying.
- If you don’t have a pastry bag, use a zip lock bag with a small corner cut off to pipe the filling.
- These donuts are best consumed fresh, as they tend to become denser if stored overnight.
- You can substitute the jam filling with custard or chocolate for variety.
