Instructions

  1. Prepare Pineapple: Roughly chop the peeled and cored pineapple and place it into a food processor or blender. Pulse briefly just until the pineapple is chopped into medium-fine pieces, avoiding pureeing.
  2. Combine Ingredients: Transfer the chopped pineapple into a 3-quart saucepan. Add the granulated sugar and freshly squeezed lime juice. Stir the mixture well to combine all ingredients evenly.
  3. Simmer the Jam: Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to maintain a simmer—preferably a strong simmer to shorten cooking time—and do not cover the pan. Stir frequently to prevent sticking and burning.
  4. Cook Until Thickened: Continue simmering and stirring frequently for 30 to 40 minutes until the jam thickens and reduces significantly. The jam is ready when a spoon dragged through it leaves a clear trail without liquid filling back in. The bottom of the pan will start to lightly sizzle, indicating nearing completion. Note that the jam will thicken further as it cools.
  5. Cool and Store: Remove the saucepan from heat and allow the jam to cool to room temperature. Transfer the cooled pineapple jam to an airtight container such as a lidded glass jar. Store in the refrigerator or freezer to maintain freshness.
