Description

These Protein Rice Krispies bars are a delicious and convenient snack, combining crispy brown rice cereal with protein powder and melted marshmallows for a delightful treat. They provide a sweet, chewy texture with an added protein boost, perfect for a post-workout snack or a quick energy bite.

Ingredients

Scale

Dry Ingredients

  • 5 cups Rice Krispies (or any crispy brown rice cereal)
  • 1 cup protein powder

Wet Ingredients

  • 10 1/2 ounces marshmallows (or sugar free marshmallows)
  • 1/4 cup coconut oil

Instructions

  1. Prepare the Pan: Line a 9 x 9-inch baking tray with parchment paper and set it aside. Alternatively, you can use any deep dish or a large loaf pan as your mold.
  2. Combine Dry Ingredients: In a large mixing bowl, add the crispy rice cereal and protein powder. Mix them gently to combine and set aside.
  3. Melt Wet Ingredients: Place coconut oil and marshmallows in a saucepan over low heat. Stir continuously until the mixture is melted completely and well combined, forming a smooth, sticky base.
  4. Mix and Shape: Pour the melted marshmallow mixture over the dry ingredients in the bowl. Stir thoroughly until every piece of cereal is coated evenly. Then transfer the sticky mixture to the lined baking tray and press down firmly to compact it into an even layer.
  5. Set and Slice: Allow the mixture to rest and firm up for about 30 minutes at room temperature. Once firm, use a sharp knife to cut into individual bars and serve or store for later consumption.

Notes

  • Use sugar-free marshmallows to reduce sugar content if preferred.
  • Press the mixture firmly into the pan to ensure bars hold together well.
  • Store bars in an airtight container at room temperature for up to a week.
  • Feel free to add nuts, seeds, or dried fruit for extra texture and flavor.
