Cheese Mixture

  • 3 cups shredded mozzarella, divided

  • 1/2 teaspoon crushed red pepper flakes

  • 3/4 cup pizza sauce

Biscuit Topping

  • 2 (16-oz.) cans refrigerated biscuits (such as Pillsbury Grands)
  • 1/4 cup extra-virgin olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon freshly chopped parsley
  • 2 tablespoons freshly grated Parmesan cheese

Instructions

  1. Prepare the cheese mixture: Preheat the oven to 350°F. In a large bowl, combine 2 cups of shredded mozzarella, softened cream cheese, ricotta, 1/3 cup grated Parmesan, Italian seasoning, and crushed red pepper flakes. Season with kosher salt to taste and mix until smooth and well incorporated. Transfer this mixture evenly to a 9″ x 13″ baking dish.
  2. Add pizza sauce and toppings: Spread the pizza sauce evenly over the cheese mixture. Sprinkle the remaining 1 cup of shredded mozzarella on top, followed by the mini pepperoni slices.
  3. Prepare the biscuits: Halve each refrigerated biscuit and roll each half into small balls. Arrange the biscuit balls evenly over the layered dip in the baking dish.
  4. Make garlic oil and brush biscuits: In a small bowl, whisk together extra-virgin olive oil, minced garlic, and chopped parsley. Generously brush this garlic oil mixture onto each biscuit ball and then sprinkle the remaining 2 tablespoons of grated Parmesan cheese over the biscuits.
  5. Bake the dip: Bake the assembled dish in the preheated oven until the biscuits are golden and the cheese is melted, about 45 minutes. Then cover the dish with aluminum foil and continue baking until the biscuit dough is cooked through, approximately an additional 15 to 20 minutes.
  6. Cool and serve: Remove the dip from the oven and allow it to cool for 10 minutes before serving to ensure the cheese sets slightly and it’s safe to enjoy.
